The word English can be both a noun or an adjective. It all depends on the context in which it is used.
For example if you say "I can speak English fluently", you are using the word as a noun.
However, when you you say "This is an English book", you are using the word as an adjective.
Remember Adjective is a word which describes a noun. In this particular case, the word English is use to describe the word book.
