ADC - converts the real-world (analog) signal to 8/16/32 bit digital signal represented by 1's and 0's because microcontroller operates only in digital domain. On the other hand once the necessary operation is complete, the processed digital data when sent out may not be useful to be understood by the real-world devices like a relay/speaker/bulbs, because they understand or operate on analog voltages, hence you need to convert these digital signals to analog which is done by DACs. They either have an inbuilt resistors in which case they output the volatage directly or you may have to connect load resistors to extract the voltage from a DAC.
