They are the most stable due to having the maximum number of valence electrons their outer shell can hold. Therefore, they rarely react with other elements since they are already stable.

All Nobel gases have a duplet or octet structure in their outer most orbit. Hence do not react with other elements under normal circumstances. On account of this they are also called as 'Inert Gases'

Atoms react with other atom to complete its outer most orbit to get stability. But inert gasses have already their outer most orbit completely filled so they are stable.

All the atoms are found to react with any other atom just to fill its outermost shell. In case of noble gases, their outermost shells are already fulfilled. Therefore in general noble gases are found to be very stable.
