Any company across the world will provide a job opportunity, regardless of the gender, immaterial of the fact that there is a gap of 3 years between the jobs.
Just put yourself into my shoes. I had learned to ride a bicycle at the age of 7, and I am 50 years old now. I have not been riding it for the past 20 years. Does it mean that I will fall if I start riding it now? Never.
Your case is similar. You have to run through an aggressive, self-training crash course on your subject at home. Take up some imaginary projects and complete them within the scheduled time at home, having self-imposed strict supervision and honest punctuality. There you go. Show courage to the recruiter and reassure their confidence that you will be 100% success on the job, which will continue to be there forever.
You can also offer to be hired on a "trial basis", say for one month (without pay). If the company is convinced, then let them pay you the whole salary along with the next month's payment. This way, it will be a win-win situation both for you and the company.
