Handled the Thai food section with the best expatriate Chefs in Pan-Asian cuisine at ‘India Jones’ at Trident Nariman Point, executed various food festivals with The Oberoi Group of Hotels. I was Part of pre-opening team in the hugely successful 'The Bombay Canteen’. This completely changed my outlook towards fine foods that were centred on Classical French Cuisine glorified during my culinary arts education, and piqued my interest towards looking homewards and exploring hidden gems in rural India and local ingredients that are often overlooked over their fancier imported counterparts. It’s my personal mission to resurrect these lesser known ingredients and help them shine in an increasingly globalized foodscape to not preserve but reinvent their use in modern indian cuisine and make it relevant again. I've had a unique insight into the sourcing, sales of gourmet foods where I now have understanding of top end customer service, interacting regularly with high profile clientele, celebrities, and fitness junkies. It’s been a pleasure to share my food philosophy with them and feel the pulse of the urban population and spending trends.
