How do I improve my PTE scores in 1 week based on my practice test? What is missing?

It entirely depends on the student. His inbuilt knowledge of English and definitely practice. Practice in a right direction with the help of an expert.

What is the minimum questions to get right to get a score of 65 or 79 in PTE exam?

In reading max marks are accumulated in Fill in the blanks and reorder paragraphs.Multiple choice multiple answers are negatively marked , so pls handle them carefully.In writing spelling and of course grammar is very important. so if you are not sure about the spelling of any specific word, kindly use... ...more

In writing spelling and of course grammar is very important. so if you are not sure about the spelling of any specific word, kindly use the synonym.
There is no minimum number of questions which needs to be answered correctly to get a 79 or 65 in PTE.
In listening Multiple choice multiple answers and Highlight incorrect words are negatively marked
Try to do as much as correct as possible.

Is 2 months preparation is sufficient to score 79+ in each module of PTE?

It all depends on the methodologies, tricks and time management during the exam, Till now 4 of my students cleared with 90/90, in 1.5 months of preparation.
