During winters the room temperature lies between 10oC-20oC which is much lower than the melting point of coconut oil and thus coconut oil exist as solid. read less

Coconut oil is solid in North Indian winters (15-25 C) but liquid when air temperature is 35C or so in summers. All vegetable oils can be converted to fats artificially by hydrogenation also called saturation (with hydrogen). More the saturation higher is the melting point of a lipid (oil/fat).
